Black Bean and Sweet Potato Chili

Chili is a great healthy meal.
This recipe combines high fiber black beans with the antioxidants found in sweet potatoes. These nutrients are known for their beneficial effects on the nervous system.
With olive oil, cilantro, and garlic, you get a tasty and nutritious mixture.

Ingredients

  • 2 tablespoons of olive oil
  • 1 medium-sized sweet potato, peeled into ¼-inch cubes
  • ½ medium-sized onion, diced
  • 2 cloves of garlic, minced
  • 2 teaspoons of chili powder
  • 2 teaspoons of ground cumin
  • salt and pepper to taste
  • 1 1/3 water or vegetable broth
  • 1 can of diced tomatoes (no added salt)
  • 1 can of rinsed and drained black beans
  • juice of ½ a lime
  • 2 tablespoons of chopped cilantro

 

Preparation

  • Heat the oil in a large saucepan over medium-high heat
  • Add the onion and the sweet potato. Cook for about 5 minutes until the onions and the sweet potato soften.
  • Add the garlic, the cumin, and the chili powder. Season with salt and pepper. Toast the garlic and the seasonings evenly, for about 45 seconds.
  • Add the water or vegetable broth and simmer for about 15 minutes or until the sweet potatoes soften.
  • Add the beans and the tomatoes. Simmer until the liquid is slightly reduced, for about 4 to 6 minutes.
  • Season with salt and pepper, freshly squeezed lime juice, and cilantro.

Tips : Prepare extra portions to keep in the fridge or freezer, and you will have several ready-to-eat meals!
