Fruity breakfast popsicle smoothie

A nourishing and refreshing breakfast, perfect for those hot summer mornings (or anytime!)

Ingredients

  • 2 1/2 cups frozen fruit (strawberries, raspberries, blueberries, blackberries, mango, banana, etc.)
  • 3 tbsp. maple syrup
  • 1 tsp. vanilla extract
  • 1 cup plain Greek yogurt
  • 1 cup of coconut milk
  • 2/3 cup homemade granola

*Modify the fruit according to what you have on hand and feel free to add nuts to your granola, or aromatics like cinnamon or chopped fresh mint to your yogurt.

Preparation

  1. In a saucepan, bring frozen fruit to a boil. Boil over low heat, stirring regularly, then remove from heat when fruit has a nice jam-like consistency.
  2. In a blender, blend yogurt, coconut milk, vanilla and maple syrup. Add 1/3 cup of fruit.
  3. In your popsicle molds, start by pouring a dollop of the yogurt mixture, then granola, then fruit, another dollop of yogurt, more fruit, and granola topping.
  4. Let sit in the freezer for at least 6 hours or overnight, and start the day off right with a ready-made popsicle!
