Sweet potato and dark chocolate Valentine’s day brownies

For Valentines’ day, try out this recipe for healthy sweet potato and dark chocolate brownies. Sweet potatoes contain a good amount of manganese and copper, these two minerals are very useful for strengthening the immune system and protecting against infections. Dark chocolate is rich in flavonoids, which would stimulate our immune system and improve our memory.

 

Ingredients

  • 1 medium sweet potato
  • 80 ml (1/3 cup) olive oil
  • 125 g (4 ½ oz) 70% dark chocolate
  • 125 ml (1/2 cup) cane sugar
  • 1 ml (1/4 tsp) baking powder
  • 2 large eggs
  • 10 ml (2 tsp.) vanilla extract
  • 125 ml (1/2 cup) all-purpose flour
  • 60 ml (1/4 cup) dried cranberries

Preparation

  • Preheat the oven to 180°C (350°F).
  • Wash the sweet potato well and pierce it in several places with a fork. Cook in the microwave oven for about 10 min. When cooking is complete, let cool
  • Meanwhile, in a small saucepan, stir the olive oil and chocolate over low heat until the chocolate is melted. Let cool.
  • Using a spoon, scoop out the inside of the sweet potato and put it in a bowl. Mash the sweet potato then beat with the sugar until almost smooth. Stir in olive oil and dark chocolate.
  • Add the powder to the batter, the eggs and the vanilla and beat until thick. Gradually add flour while stirring. Stir in the dried cranberries.
  • Spoon the mixture onto a 20 x 20 cm (8 x 8 in) non-stick baking sheet. Level the top. Bake for about 20 minutes or until a toothpick inserted into the brownie comes out clean.
  • Let cool completely on the baking sheet before cutting into portions.
